Best fried chicken.

I have been making fried chicken at home for years now. I have played around with the recipe so many times finding new clues and helpful hints from all kinds of sources but I think I finally made it perfect šŸ™‚ SOOO STOP buying expensive fried chicken for the family and do it yourself. So much cheaper and so good.

We buy chicken wings because the girls get smaller portions.

First and foremost I marinate the chicken wings. Place your chicken in a 9×13 pan, salt and pepper the chicken and then pour olive oil over it, pour lemon juice over it and finally sprinkle with Italian seasonings. I would say you need about 3/4 cup of the olive oil and 1/4 cup of the lemon juice. Place this in your refrigerator, i do this in the morning and it sets all day but an hour is long enough.

When you are ready to begin cooking plug in your fryer. I have a cool daddy and love it I use it often. Pull your chicken out of the fridge and pour heavy whipping cream or milk over (1/2 cup) roll the chicken in all of the juice.

From there take about a 1 1/2 cups flour, 2 tbl pepper, 2 tbl salt and what ever seasonings you want on your breading (i use Italian again) place them in a gallon sized zip lock. Choose a piece of chicken and let the excess juice drip off then drop in the bag and shake. I do four wings at a time.

Once your fryer is hot start frying your chicken, I only put 4 in a time so that the oil temp does not drop and the breading stays on better.

Check the temp of your chicken before putting it out of the grease, it should reach 165 before you pull it out. From there I take a deep dish with a paper towel to catch the grease and put a cookie cooler rack over it and let the chicken drip its excess grease off.

Once your chicken looks dry place it in a glass bowl with another paper towel in the bottom to soak up left over grease and serve.

This chicken is so good, it is juicy and has a ton of flavor. The breading is flaky and crisp. Everyone is sure to enjoy. If you want a little spice to your wings along with adding the milk to your juices add some wing sauce or Tabasco before you bread it. And as always ENJOY šŸ™‚
